Pickling chanterelles is one of our favorite ways to preserve the earthy flavor of these nightshades with a fleeting season. We use peppercorns and clove, dill, and thyme, to balance and enhance the chanterelles. Use slivers of these in salads or top toasted bread rounds for an easy appetizer. ⁠⁠
