It's Fall Y'all

A basket of vidalia onions

This week’s basket has us spinning with all of the possible meal combinations. With eggplant from our own farm and shiitake mushrooms from Grandview, we might  make this or this.


With the sweet potatoes from the Mississippi Delta and Golden apples from Athens, GA, we might peel, cube and roast together with some good olive oil, freshly minced rosemary, salt and pepper. Any leftovers would be perfect in the next day’s salad. The zucchini from Blount county is looking to mingle with the sweet Vidalia onions and tomatoes.  A quick saute should make them happy. Any leftovers would be fantastic on a pizza.
