Organic Fennel pollen, traditionally an Italian commodity, pairs beautifully with lemon balm grown and distilled on our Harpersville, Alabama farm. We hand-collect our fennel pollen and then blend it with the lemon balm hydrosol. The two flavors meld, in this in savory jelly that plays as well with hot biscuits as it does slathered onto a pork roast or hearty veal chops.
