Spring garlic shoots, picked at their tender best and tucked into a bright brine of vinegar, onions, dill, mustard, and a little red pepper flake heat. These small-batch scapes are crisp, garlicky, and pleasantly tangy — a Southern pantry treat straight from our Alabama kitchen.
Use them anywhere you’d reach for a caper: chop into chicken salad or tuna salad, fold into deviled eggs, or spoon over roasted potatoes. They’re also a perfect Bloody Mary garnish (just tuck a whole spear into the glass), and they’re beautiful julienned over simply cooked fish or poultry for an herby, pickled finish.
